Italian Deli Pistachio Spinach Sandwich

Ingredients
Filling

Spinach, chopped - 2 cups

Pistachios, lightly crushed - ½ cup

Gruyère cheese, shredded - ½ cup

Feta cheese, crumbled - ½ cup

Fresh mint, chopped -2 tbsp

Egg - 1

Pistachio paste - 1 tbsp

Black pepper -½ tsp

Aleppo pepper — ¼ tsp
Optional
-
Mortadella, chopped — 3–4 slices
Pastry
-
Puff pastry sheet — 1

Spray oil (to prevent sticking)
Instructions

Mix the Filling:
Combine spinach, Gruyère, feta, mint, egg, pistachio paste, black pepper, and Aleppo pepper in a bowl.
Add mortadella if using. -
Prepare the Pastry:
Preheat oven to 400°F (200°C).
Lightly spray a baking sheet with oil.
Cut puff pastry into squares or rectangles. -
Assemble:
Add a spoonful of filling to each pastry piece.
Fold and seal the edges (triangle, square, or roll).
Press with a fork if desired. -
Bake:
Bake 15–20 minutes, until golden brown and puffed. -
Serve:
Cool slightly and enjoy warm.
