Italian Deli Pistachio Spinach Sandwich

Ingredients

Filling

  • Spinach, chopped - 2 cups

  • Pistachios, lightly crushed - ½ cup

  • Gruyère cheese, shredded - ½ cup

  • Feta cheese, crumbled - ½ cup

  • Fresh mint, chopped -2 tbsp

  • Egg - 1

  • Pistachio paste - 1 tbsp

  • Black pepper -½ tsp

  • Aleppo pepper — ¼ tsp

Optional

  • Mortadella, chopped — 3–4 slices

Pastry

  • Puff pastry sheet — 1

  • Spray oil (to prevent sticking)


Instructions

  1. Mix the Filling:
    Combine spinach, Gruyère, feta, mint, egg, pistachio paste, black pepper, and Aleppo pepper in a bowl.
    Add mortadella if using.

  2. Prepare the Pastry:
    Preheat oven to 400°F (200°C).
    Lightly spray a baking sheet with oil.
    Cut puff pastry into squares or rectangles.

  3. Assemble:
    Add a spoonful of filling to each pastry piece.
    Fold and seal the edges (triangle, square, or roll).
    Press with a fork if desired.

  4. Bake:
    Bake 15–20 minutes, until golden brown and puffed.

  5. Serve:
    Cool slightly and enjoy warm.
