Pistachio Panna Cotta

Yield: 6 servings

Prep Time: 15 minutes + chilling

Ingredients

- 4 tbsp cold water

- 1 1/2 tsp gelatin

- 1 cup Absolutely Nuts 100% Pistachio Paste

- 1 cup heavy cream

- 1 cup half-and-half

- 1/4 cup sugar

- 2 tsp vanilla

Instructions

 

1-  Bloom The Gelatin: In a small bowl add the 4 T. of water and sprinkle in the gelatin powder and reserve.

2- The Pistachio Base: Add the cup of Absolutely Nuts 100% Pistachio Paste to a saucepan with the heavy cream, half and half, sugar, and vanilla bean paste. Bring this mixture to a boil, whisking as needed. Turn off the heat.

3- Bringing It Together: Whisk in the bloomed gelatin until it’s fully dissolved and strain the mixture through a fine mesh strainer. Divide between 6 ramekins or small glass cups. Transfer to the refrigerator until the panna cotta is set, around 3-4 hours.
