Veal Rolls with Pistachio Pesto

Tender veal slices rolled with cooked ham, creamy mozzarella, and a vibrant pistachio pesto made from Absolutely Nuts Unroasted 100% Pistachio Paste. Coated in a Parmesan–breadcrumb crust and baked until golden, these rolls are elegant, comforting, and irresistibly aromatic.

Ingredients

  • 600 g thin veal slices

  • 11 slices cooked ham

  • Small mozzarella balls (ciliegine), 1 per roll

  • 100 g day-old breadcrumbs

  • 100 g Absolutely Nuts Unroasted 100% Pistachio Paste

  • 30 g grated Parmesan cheese

  • Parsley, chopped, to taste

  • Extra virgin olive oil

  • Salt and pepper, to taste

Instructions

  1. Make the pistachio pesto.
    In a small bowl, combine the Absolutely Nuts Unroasted 100% Pistachio Paste with olive oil, salt, and pepper.
    Mix until smooth and creamy. Set aside.

  2. Assemble the veal rolls.
    Lay out the veal slices on a board.
    On each slice, place:
    – 1 slice of cooked ham
    – 1 spoonful of pistachio pesto
    – 1 small mozzarella ball
    Roll each piece tightly and secure with a toothpick or small skewer.

  3. Prepare the coating.
    In a bowl, mix together the breadcrumbs, chopped parsley, grated Parmesan, and a small spoonful of pistachio pesto.
    Toss until the pesto distributes lightly through the crumbs.

  4. Coat the rolls.
    Lightly brush each veal roll with olive oil, then press into the breadcrumb mixture to coat all sides.

  5. Bake.
    Arrange the coated rolls on a lightly oiled baking tray.
    Drizzle with a little extra olive oil.
    Bake at 170°C (340°F) for 12 minutes, or until lightly golden and the mozzarella inside is just melted.

  6. Serve.
    Plate the veal rolls and add a spoonful of pistachio pesto on top or on the side.
    Garnish with fresh parsley.
