Veal Rolls with Pistachio Pesto

Tender veal slices rolled with cooked ham, creamy mozzarella, and a vibrant pistachio pesto made from Absolutely Nuts Unroasted 100% Pistachio Paste. Coated in a Parmesan–breadcrumb crust and baked until golden, these rolls are elegant, comforting, and irresistibly aromatic.
Ingredients

600 g thin veal slices

11 slices cooked ham

Small mozzarella balls (ciliegine), 1 per roll

100 g day-old breadcrumbs

100 g Absolutely Nuts Unroasted 100% Pistachio Paste

30 g grated Parmesan cheese

Parsley, chopped, to taste

Extra virgin olive oil

Salt and pepper, to taste
Instructions

Make the pistachio pesto.
In a small bowl, combine the Absolutely Nuts Unroasted 100% Pistachio Paste with olive oil, salt, and pepper.
Mix until smooth and creamy. Set aside. -
Assemble the veal rolls.
Lay out the veal slices on a board.
On each slice, place:
– 1 slice of cooked ham
– 1 spoonful of pistachio pesto
– 1 small mozzarella ball
Roll each piece tightly and secure with a toothpick or small skewer. -
Prepare the coating.
In a bowl, mix together the breadcrumbs, chopped parsley, grated Parmesan, and a small spoonful of pistachio pesto.
Toss until the pesto distributes lightly through the crumbs. -
Coat the rolls.
Lightly brush each veal roll with olive oil, then press into the breadcrumb mixture to coat all sides. -
Bake.
Arrange the coated rolls on a lightly oiled baking tray.
Drizzle with a little extra olive oil.
Bake at 170°C (340°F) for 12 minutes, or until lightly golden and the mozzarella inside is just melted. -
Serve.
Plate the veal rolls and add a spoonful of pistachio pesto on top or on the side.
Garnish with fresh parsley.
